"Cuando alguien se pronuncia en favor o en contra de la legalización de algún bien o conducta considerada polémica, es fácil confundir esa manifestación con una en favor o en contra del consumo de aquel bien o de la realización de aquella conducta.

Tomemos el ejemplo de la legalización del consumo de un bien X. Imagine usted que una persona A es una activista en pro de la legalización de X, mientras que su amigo B es más bien un partidario de que X se mantenga como un bien ilegal. Basándonos únicamente en esta información, aventurarnos a decir que A es un consumidor de X -o, en todo caso, que está a favor del consumo de X- sería una conclusión bastante apresurada. Bien puede ser que A en realidad condene esa conducta tanto o más que B, pero que a la vez esté a favor de que la decisión sobre si consumir X o no sea estrictamente personal.

Por otro lado, debe tomarse en cuenta que decir que X debe ser prohibido pues su consumo "es malo o dañino” es caer en un grave error de concepto. Que una ley prohiba el consumo de un bien o la realización de alguna práctica no necesariamente soluciona los problemas que genera su consumo, pues esa ley no elimina la necesidad o voluntad de las personas de seguir consumiendo de ese bien o realizando esa práctica. No hay, entonces, una relación directa entre el efecto negativo de X y la necesidad de prohibirla. Otras veces, incluso, la experiencia empírica podría demostrar que el mantener algo como ilegal en realidad incentiva a que su consumo aumente en lugar de disminuir. Por lo demás, pretender contradecir el argumento pro legalización de X con uno que demuestra lo dañino que resulta X no es más que un error lógico. Lo correcto, para quien no esté de acuerdo con personas como A, sería argumentar por qué la legalización de X resultaría perjudicial desde su perspectiva.(...)

La postura que defiende quien defiende la legalización de una conducta no es que esa conducta deba realizarse porque está bien que se realice. Lo que ocurre es que la legalización permite que la decisión sobre si realizar o no aquello recaiga únicamente en la persona que se vería directamente afectada, y eso, cuando no se afecta a terceros, no es otra cosa que saber respetar el derecho fundamental a la libertad individual."

Entrevista a Stephan Guyenet, investigador y blogger de Whole Health Source (y II)

De lo poco que conozco de nutrición, creo que una de las opiniones que más respeto es la del dr. Stephan Guyenet, pues me parece que integra de una manera muy interesante la investigación científica seria y el conocimiento tradicional, y su lenguaje es bastante accesible. Es muy raro encontrar textos suyos traducidos al castellano, así que esta entrevista es una joya para quienes no lean inglés (de todos modos la traducción no es muy buena así que si pueden lean el texto original).

"Whole grain flours include germ which is the part of the grain containing oil. Before it’s ground mother nature has it’s own packaging to keep the germ fresh. Grinding into flour crushes this natural packaging releasing the oil. This nutritious germ oil in the flour goes rancid easily. To prevent this whole grain flours need to be refrigerated, frozen, or gas flushed and vacuum packed."
"Prior to the modern era most American towns and European villages had a gristmill. This mill was the source of flour for the village. Farmers brought in their grains and the flour was sold back in differing grades according to the grain type and coarseness. This flour was sifted (boulted) to the degree it could be with a simple sifter or cloth. This process would remove much of the bran. The flour was made on demand, not stored for long periods of time. It still contained much of the germ and would go rancid fairly quickly."

"la única forma de concebir una revolución anticapitalista es en términos de la creación, expansión, multiplicación y confluencia de grietas o rupturas en el tejido de la dominación capitalista (...) un No que va abriendo otro hacer. Una negación-y-creación. Todo el tiempo nos estamos rebelando contra la lógica agresiva del capital, tratando de crear espacios o momentos donde hacemos lo que nosotras o nosotros consideramos necesario o deseable, y no lo que nos impone la lógica del dinero."

"Nuestra existencia es una existencia contradictoria y en la lucha contra el capitalismo tenemos que reconocer y manejar estas contradicciones, no buscar una pureza revolucionaria que no puede existir. La búsqueda de la pureza nos lleva muy fácilmente a descalificar a todos los que no comparten nuestra perspectiva precisa. El reto revolucionario es más bien promover la confluencia de las rebeldías que existen dentro de todos nosotros."

"Algunos de estos movimientos han enfocado sus esfuerzos en el Estado y habría que preguntar ¿cuáles son las consecuencias de adoptar formas estatales de organización? Tiene dos importantes. Puede ser que se logren algunos cambios significativos en términos de justicia o redistribución de ingresos, no lo dudo ni lo desprecio. Creo que en esos países sí se ha logrado una redistribución significativa.
Pero esta redistribución sólo se puede lograr dentro de los límites fijados por la necesidad de promover la reproducción del capital, y no detiene en nada la agresión que está destruyendo el mundo. Lo que está en juego es más grande que la redistribución de ingresos: el futuro de la humanidad."
